What is Broken Arrow Ranch?
We are based in the Texas Hill Country where we harvest and process truly wild, free-range deer, antelope, wild boar, and other wild game under full inspection by the Texas Department of Health and USDA. Broken Arrow Ranch has been providing wild game products to fine dining  establishments since 1983 and during this time we have become generally recognized for supplying the highest quality game meats on the market. We are not a “store front” purveyor who only warehouses meat from other sources or suppliers.

Why should this be important to you?
Harvesting and processing our own meat allows us to maintain the high quality of the products we sell to you. Some of the differences described below explain how we obtain the highest possible quality.

Can you obtain the same products from a local purveyor?
The products we provide are available only by ordering them directly from us. Obviously, there are other sources of venison and other wild game meats, but there are distinct and important differences.

What is different about Broken Arrow Ranch game meats?
About 85% of the venison sold in America is raised on deer farms in New Zealand. All of the deer and antelope we harvest live as free-ranging and wild animals on large open ranches. They subsist on a widely varying diet that gives the meat a rich and complex flavor. Another important difference is the unique way in which our deer and antelope are harvested.

Differences in the way we harvest
Our process is unique in the world - the only fully inspected year-round harvesting of truly free-ranging wild game. Avoiding stress during slaughter is a major factor in controlling meat quality. Our field harvesting technique is to quietly search the ranch for animals ready for harvesting and killing the animals by a single long-range head shot from a suppressed rifle. The free-range deer and antelope we harvest are never under any stress and the resulting meat quality is the highest possible. The meat is then processed on the ranch in our proprietary mobile processing facility under full inspection.

How is Broken Arrow Ranch game meat packaged and aged?
Proper aging and packaging are important steps to enhancing and preserving the quality of our meat. We can provide meat that has been aged to perfection because we harvest our own products. All meat is fully aged on the bone for 21 - 28 days before it is cut and packaged. Keeping the meat on the bone as it ages is a traditional technique that keeps allows the natural muscle tension to relax individual muscle fibers and produce more tender meat. It is an expensive and time consuming process that very few purveyors perform. Since we know the harvest date for all our products, we can also satisfy any of your custom aging requirements. All meat is vacuum packaged. Even our frozen products have been properly aged prior to freezing. No other meat purveyor can offer this quality.

How do Broken Arrow Ranch products compare in price?
We know you must make a profit on every entree you sell. Our products have become more affordable as our volume of harvesting has increased. However, we cannot produce the very highest quality at the lowest cost. The steps we take to provide you with the highest quality game meat do add cost to our products. We carry a broad range of products that are appropriate for almost any menu pricing level. Our sales representatives have food experience and are capable of offering suggestions about preparation as well as advice about how other chefs are successfully selling our products profitably.
