Hill Country Casserole

This recipe is a favorite at the ranch. Our boys just can't seem to get enough.

2 tblsp olive oil
1 clove garlic
1 tsp salt
1/2 tsp pepper
1 pound Broken Arrow Ranch Ground Venison
2 8-oz. cans tomato sauce
1 8-oz. package small egg noodles or spaghetti
1 3-oz. package cream cheese, softened
1-1/2 cups sour cream
6 green onions, chopped
1/2 pound cheddar cheese, grated

Preheat oven to 350° F. In a skillet, sauté the garlic in the olive oil. Add the meat to the skillet and brown. Add salt, pepper and the tomato sauce. Simmer for 20 minutes.

Cook the noodles according to package directions. In a separate bowl, combine cream cheese, sour cream and green onions. Place noodles in a greased 13x9-inch casserole. Top with cream cheese mixture and then meat mixture. Sprinkle cheddar cheese on top. Bake, uncovered, about 30 minutes, or until hot and bubbly.

Serves 8.
