Hunter's Sauce

2 tblsp butter
2 tblsp onion or shallots, minced
1 cup mushrooms, sliced
½ cup dry white wine
2 tblsp brandy
½ cup tomato sauce
1 cup Brown Sauce
1 tsp chopped parsley

Sauté 2 tblsp minced onion or shallots in 2 tblsp melted butter until tender. Stir in 1 cup sliced mushrooms and gently sauté for about 2 minutes. Then add 1/2 cup dry white wine and 2 tblsp brandy and simmer until the quantity is reduced by half. Add 1/2 cup tomato sauce and 1 cup Brown Sauce and continue cooking for 5 minutes, then correct the seasoning and add 1 tsp chopped parsley.

Makes about 2 cups.
