Stir Fried Antelope with Cashews


Ingredients
1 lb Broken Arrow Ranch South Texas Antelope Stir Fry

Marinade
1 cup sake or white wine
1 cup soy sauce
2 Tbsp sesame oil
1 clove garlic, minced
2 Tbsp ginger root

Stir Fry
2 Tbsp peanut oil
1 Tbsp each garlic and ginger root
1 bell pepper, sliced
1 onion, sliced
½ red bell pepper, sliced
½ cup mushrooms, sliced
½ cup water chestnuts, sliced
½ cup celery, sliced on diagonal
½ cup bean sprouts, washed and drained
1 cup broccoli flowerettes
½ cup unsalted cashews
1 cup beef stock
2 Tbsp cornstarch, mixed with ¼ water
Soy Sauce
White pepper
Green onions, chopped for garnish

Combine marinade ingredients in a glass bowl, add venison and let marinate overnight.

Remove meat from the marinade and drain well. Heat oil over high heat. Add ginger and garlic and stir. Add meat and stir. Add onions, peppers, celery, stir. Add mushrooms, water chestnuts, bean sprouts, broccoli, cashews, and stir a few more moments. Add beef stock. Thicken with cornstarch mixture. Season to taste with soy sauce and white pepper. Serve on rice, garnished with green onions.

Serves 3-4.
