Venison Beer Bratwurst
(a.k.a Deer Beer Brats)

Ingredients
4 links Broken Arrow Ranch Venison Bratwurst
1 Tbs olive oil
1 Tbs butter
2 medium onions, sliced thin
3 cans beer (lager)

In a large pan heat oil and butter over medium-high heat. Add onions and sauté until translucent, about 10 minutes. Transfer onions to a foil pan. Add enough beer to fill the pan about halfway. Place the pan on a medium hot grill (Tip: Make sure your pan will fit on the grill before starting). Heat the onion/beer mixture until it is simmering then add the bratwurst. If necessary, add more beer to almost cover the bratwurst. Drink any remaining beer. Simmer the bratwurst for about 20 minutes, turning it several times. When the bratwurst is cooked through, transfer them to a hot grill and quickly brown them on both sides. Return the brats to the onion/beer mixture and serve immediately or hold them in the onion/beer mixture over low heat until ready.

Serve in a bun, bratwurst bun if you can get them, topped with the cooked onions and German mustard.

Serves 4.
