Herb Rub

Ingredients

  • 3 cups mixture of fresh herbs such as rosemary, thyme, sage, and oregano, finely chopped, or 4 tbsp mixed dry herbs.
  • 4 garlic cloves, crushed
  • 1 Tbsp salt
  • Grated peel of 1 lemon
  • 1 Tbsp coarsely ground black peppercorns
  • 1 Tbsp coarsely ground white peppercorns
  • 1 tsp finely ground allspice
  • 1 Tbsp mustard powder

Combine all the ingredients in a shallow dish. Dip each piece of meat into the mixture so that it is well coated; then cover and marinate in the refrigerator before frying, broiling, or grilling.

Shelf life: 3 months in an airtight container (but use dried instead of fresh herbs and add the garlic just before use.)

Marinating time: 4 - 24 hours

Use herbs such as rosemary, thyme, sage, and oregano to rub onto lamb chops, chicken pieces, or game pieces for delicious results.
